Meringues & Red Berries
Double Cream & Meringues ice cream with mascarpone, red berries and red berry coulis.
Mövenpick Double Cream & Meringues
4-8 tablespoons mascarpone
170 ml cream
2 teaspoons raspberry liqueur (or kirsch)
155 ml red berry coulis
240 g mixed red berries
Icing sugar to taste
4 lemon balm leaves
8 scoops of Mövenpick Double Cream & Meringues
Mix the mascarpone, cream and raspberry liqueur until a smooth paste is obtained.
Make a pool of this mix on the plate, and pour over 1/3 of the red berry coulis.
Mix the red berries with the rest of the coulis and the icing sugar, allow to marinate briefly and place on top of the mascarpone.
Decorate with a lemon balm leaf and add the scoops of ice cream.
