Switzerland is known for its longstanding chocolate tradition. Milk chocolate was invented in 1875. In 1879 the unique conching technology was discovered. This process gave chocolate its typical soft-melting quality, boosting Swiss chocolate to global fame.

Note: Stirring naturally warms and aerates the chocolate paste. This process allows undesirable flavors to evaporate and brings out the cocoa’s characteristic nuances. Pure dark chocolate contains over 600 flavour compounds.Superior chocolate, for example Criollo Maracaibo from Venezuela, should be savoured like wine. The best time of day is eleven o’clock in the morning or six o’clock in the evening. All your senses are keenest at these times.

The Tonka bean comes from a tropical tree native to Southern America (Venezuela, Guyana, Brazil…), rich in fibers, magnesium and zinc. From that tree is obtained a fine-grain hard wood: Teak. The Tonka bean is an elongated black grain harvested once it is ripe, then soaked in rum and dried for several months in order to release its flavor.Today this spice appeals to chefs and pastry chefs who use it to flavour their salty and sweet recipes. Cream soups, purees, marinades, creams and desserts, but also cocktails… It only needs to be grated in very small quantity to obtain a bewitching vanilla, almond and caramel aroma.

The Tonka bean is called « Cumaru » in Brazil and « Sarrapia » in Venezuela. It is harvested in the wood from February to April and obtained after crushing the nut and pulp with a stone tool. But the Tonka bean is also renowned for its aroma among perfumers who use it in their creations instead of musk. Not well-known in Europe, the Tonka bean still remains a rare spice.
