The preparation is an art, the result dazzling. Under high pressure, water heated to just 96º C is pressed through approximately 7 grams of perfectly ground coffee in less than 20 seconds. In this way a maximum of 50 ml of espresso drips down into thick, preheated 80 ml cups. Also: The crema, that hazelnut brown, slightly mottled foam, must be thick enough to hold the sugar on top (the ‘island test’).
