Valais ApricotsKnowing that the apricot harvest in the Valais is limited, our Maîtres Glaciers reserved their apricots several months in advance, insisting they should only be picked once they were completely ripe. Luckily, the weather turned out to be perfect: The amazingly sunny summer of 2015 made the apricot harvest into one of the best - greatly contributing to this uniquely fruity apricot sorbet.
